Bolle Alcohol Free Wine exhibited at London Wine Fair 2022.

Hi, my name is Roberto Vanin. I’m italian, so if you see me shaking the hands it’s very typical Italian.
I’m a scientist as well, an enologist as an education.

I work in many companies around the world in R&D positions, so research and development and I’m an innovator.

What I’m looking here today is to break through within the wine industry, with the clear and outstanding innovation which is called ‘Bolle’.

What is ‘Bolle’ about?
It is a new way of creating no alcohol and low alcohol alternatives, which is basically based through a fermentation process.

Fermentation is a very traditional process in which we make wine, beer, cider, sake, all the fermented drinks, but also food like cheese and bread.

But I’m using yeast in a very specific way, so the process which I patented is called ‘Zero Gradi’.

And I’ve worked with a German biotech company to basically shut down the some portion of the yeast that is responsible for making alcohol.

So the sugar is then fermented, but we produce all the flavor that we traditionally like in the other drinks, but without any alcohol.

Bolle is the first launch in the market with that technology, there’s nobody else which is able to produce it.

I’m using and I’m fermenting juices different type of juices.

The Bolle Rosa in particular is made using black current juice.

There’s black current juice, berry juice but also I’m using Green Tea as a provided to provide the body or the polyphenols.

Green Tea is very rich, it’s not only an antioxidant it’s very rich in catechins which are very similar to the polyphenols, slightly smaller so much easier to drink.

The Bolle Oro is the white version and it’s made on apple juice, pear juice and grape juice of course.

And then again the drinking experience is very adult very similar to what we have with the wine.

With the difference is, that it is dry, so there’s no residual sugar.

The amount of sugar is very minimal it’s 1.2 grams per 100 milliliter.
So the amount of calories are also very low, so there’s between five to six calories per 100 milliliters.

A bottle contain less than 50 calories.

So you can drink it with without any burden so there’s not much calorie there’s not much alcohol there’s no hangover.

And it’s going to be perfect for the summertime, or just enjoying with your mixing if you like.
